Porchetta Recipe Cooked on the Weber Rotisserie

Seriously, this Porchetta had it all! The flavour balance from the seasoning was incredible! For reference, here's what we used below:

- Kosher salt
- Cracked black pepper
- Ground fennel
- Chilli Flakes
- Garlic Goals (optional, can be purchased here:https://www.naturalsmoke.com.au/product/basics-bundle/)

I didn't measure any of the above ingredients, I just gave the meat side of the pork belly a nice even coverage. Next time i'd like to grate some orange or lemon peel also for some citrus flavour.

My rule of thumb for using a rotisserie is that you should be able to hold your hand just below the meat for around 3 seconds before it becomes unbearable. The only time you should go hotter is if you need to build your crackling further. If you can hold your hand under there for more than 5 seconds, you either need to lower your rod or add more charcoal/briquettes.

If you are using your Weber as a roasting set up for this cook, or using your oven, you want to be maintaining around 450f/230c for this cook. If you are cooking a larger belly, once your crackling has set, you can lower your temperature to 350f/175c until you've achieved an internal temperature in the meat of around 185f/85c.
