How To Make Amazazuke 甘酢漬け | Japanese Sweet Vinegar Pickling

Amazuzuke is a traditional Japanese technique used to pickle fresh vegetables in a combination of sugar and vinegar. This recipe can be used with any fresh vegetables, carrots, cucumbers or radishes, it doesn’t have to be Rakkyo! Amazuzuke can also be stored for several months before use! I’ll be sharing a few recipes to cater to anyone’s taste palette!

Ingredients
- Rice Wine Vinegar
- Rakkyo, or any of your favorite vegetables, cucumbers, carrots, onions
- Ueno or Brown Sugar
- Kombu (Dried Kelp)
