How to make Arroz con Pollo!

SOFRITO:
2 bell peppers
1 large onion
1 bulb of garlic
1 bunch of cilantro
1/5 bunch of culantro (if you can find some!)
Dash of water for easy blending

ARROZ CON POLLO:
Ingredients:

2 lbs chicken thighs with bone
Garlic powder
Black pepper
Adobo
Salt to taste
3 packets of Sazón Goya con Culantro y Achiote
1 whole garlic bulb smashed
1 large onion
1 bell pepper
1 whole cilantro bunch
2 heaping tablespoons of tomato paste
1/2 cup sofrito
2 cups chicken stock
1 1/2 cups water
1/2 shot Bacardi dark rum (optional)
3 cups medium grain rice

How To:

1. Season chicken with garlic powder, black pepper, adobo, 1 packet of Sazón Goya.
2. Add to heated pot with a little bit of oil and fry until cooked and golden, about 15 min.
3. Remove from pot when it’s done and set aside.
4. In the same pot, add the chopped onion, bell pepper, 1/2 cilantro bunch. Let cook for about 2 min. Then, add the garlic and tomato paste and mix together.
5. Add the rice, sofrito, chicken stock and water.
6. Salt to taste
7. Twirl it around, turn the stove to low and cover the pot for 20 min. Do not open!
8. After 20 min, open it up, twirl it around and add the last 1/2 of cilantro. Then, add the chicken and twirl it.
9. Cover the pot for another 15 min so everything can cook together.
10. Done! Plate your dish and enjoy a little piece of Puerto Rico with love! ♥️
