An absolutely perfect tea time snack...
A sweet South African heritage delicacy - crisp pastry plaits fried then dipped in an aromatic syrup! sticky donut treat that’s deliciously sweet, crunchy, drenched in syrup, laced with cinnamon, lemon and ginger. oh so good!
This syrup needs to be made in advance and chilled overnight. Submersing the hot fried koeksisters in ice cold syrup ensures optimal absorption.
SYRUP:
2½ cups sugar
1 cup water
2 tsp lemon juice
2 slices fresh ginger
1 cinnamon stick
3 INGREDIENT DOUGH:
2 cups self raising flour
(or substitute with 2 cups flour + 2 tsp baking powder)
1 cup plain yogurt
3 tablespoons butter
To make the Syrup:
Mix the sugar, water, lemon juice, ginger and cinnamon in a saucepan
Let it simmer for +-10 minutes or until slightly thickened. Remove ginger and cinnamon pieces and allow it to cool then refrigerate for at least 6 hours
To prepare the Dough:
Mix together the flour, yogurt and butter until it forms a smooth and soft dough
Let it rest for +- 30 minutes
Roll out about 5mm thick
Cut into 6*3cm strips or the size you prefer. Leaving a space of 1cm from the top, slit each piece into 3 equal parts then braid as shown in the video
**NOTE make sure to pinch the ends together nicely or it will open in the oil**
Fry on medium high heat for +-2 minutes on each side or until golden brown
IMMEDIATELY transfer from the oil to the cold syrup
Place on a rack to drip excess syrup
