my homemade chicken soup recipe! | rick in the kitchen

I am no seasoned professional, but if you couldn’t already tell from the amount of food analogies in my reviews, I adore food and cooking at home. I’ve honed my go-to comfort recipe for chicken soup over the past year (chicken soup + rice is my favourite meal in da world), and for sheer fun, I’ve decided to share it in video form! An oddball for a music channel, I’m certain you’ll agree – but let’s have fun with it, surely?
RECIPE:
4 chicken thighs
1 brown onion
1 carrot
1 celery stalk
1/2 leek
4 garlic cloves
1 cup of chicken or vege stock
1 tbsp dill
2 bay leaves
lemon peel
1 tbsp brown sugar
salt for seasoning

1. Salt the chicken thighs and fry in pan with no oil, until browned on outside, and a fond forms on the bottom. Remove.
2. Dice onion, carrot and celery, and fry in the pan.
3. Dice garlic and leek. Add also. Fry until softened and fragrant.
4. Deglaze pan by adding a cup of stock.
5. Add dill, bay leaves, lemon peel, brown sugar.
6. Fill pot with water. Add chicken back to soup. Simmer for 45 mins.
7. Remove cooked chicken and shred. Add back to soup.
8. Season to taste with salt.
9. Serve with rice (garnish suggestion: coriander or spring onions). Eat.
