Onion Bhajis (Pakoras)

Onion Bhajis are now probably the most favourite starter item before a British Indian meal. In India, typically onion bhajis or pakoras as they are known are eaten as snack items, for example with tea when guests come over. This unique recipe for Onion Bhajis is most definitely a hit with customers at the Brilliant and has been on the menu ever since the restaurant opened. The individual flavours of spices like carom and coriander compliment the vegetables superbly to produce crispy yummy delights.

Recipe: (makes 25-30)

1 large or 2 medium sized potatoes, peeled and diced into ½ cm cubes
½ medium sized onion, finely chopped
1 bunch (100g) fresh baby spinach, shredded
2 tbsp fresh chopped coriander
½ finger green chillies, finely chopped or made into a paste
1 tbsp ginger and garlic paste
1 tbsp white vinegar
¾ tsp red chilli powder
1 tsp cumin seeds
1 tbsp coriander seeds
¾ tsp turmeric
¼ tsp bicarbonate of soda
¾ tsp garam masala
¼ tsp carom seeds (crushed using a pestle and mortar or rolling pin)
1 tsp salt or salt to taste
150g gram flour
Oil for deep frying


Method:

1. Heat oil for deep frying
2. In a large bowl, add onion, spinach, potatoes, fresh coriander, ginger and garlic, green chillies, crushed carom seeds, coriander seeds, white vinegar, bicarbonate of soda, salt, turmeric, red chilli powder, cumin seeds and garam masala (in no particular order)
3. Mix these ingredients together using one hand to mix and one to hold the bowl
4. Once mixed well add about ¾ of the gram flour and mix together for 30 seconds to one minute
5. Add the remaining gram flour and mix again for a few seconds
6. Using your hands, make small
round dumplings (bhaji size) and put on to a tray, ideally you should be able to make about 25 bhajis from the mixture you have. You may need to moisten your hands to help you shape the bhajis
7. Once all shaped, deep fry the onion bhajis in the oil for about 3 minutes until they are golden brown and crispy
8. Serve with your favourite chutney and enjoy
