In today's weird little video, I recreate Emma Chamberlain's PBJ from scratch. Full recipe below.
Bread Recipe:
250g Strong Bread Flour
5g Salt
3.5g Yeast
175g Lukewarm Water
2.5ml Olive Oil
Put flour in a bowl with yeast on one side and salt on the other side. Mix yeast on its side, mix salt on its side, pour in the water and mix it up.
Tip it onto the worktop and knead for 10 minutes.
Cover bowl in oil, then add/roll dough. Cover bowl with cling or towel and leave for two hours.
Knock dough back, fold it under itself and then put it on a grease proofed baking tray. Cover with a towel/proving bag and leave for two hours.
Preheat (fan) oven to 180. Slash the top of the dough, put a tray of boiling water in the bottom of the oven for steam, and bake for 25-30 minutes.
Jam Recipe:
200g Fruit
135g Jam Sugar
35ml Water
5ml Lemon Juice
Put a plate in the freezer.
Tip blackcurrants into saucepan with water. Bring to the boil and simmer for 5 mins until fruit has broken down to chunky pulp. Leave to cool slightly. Add sugar and lemon juice and heat gently until sugar is dissolved.
Boil for 10 minutes, remove from heat and spoon some jam onto the frozen plate. Leave it for two minutes then push with your finger. If it wrinkles, the jam is ready, if not, re-boil for two minutes and try again.
Once its ready, remove from heat, skim off any froth, cool for 15 minutes and then add to sterilised jars (to sterilise jars, wash with soapy water and then place in oven at 120 (fan) for 15 minutes).
Peanut Butter Recipe
200g Roasted Peanuts
Dash of Oil
Sprinkle of Sweet Cinnamon
Sprinkle of Sugar
Basically just blend it up until it looks unappetizing...
