Beef Chuck Roast Pasta Recipe #pastarecipe
Easy Chuck Roast Pasta Recipe 🐂🍝
P.S. This recipe is #whole30approved and can be made #AIP friendly if you omit the tomatoes, tomato paste, Parmesan cheese, and pepper. Simply add 1 additional cup of bone broth in place of tomatoes and thicken sauce if needed with arrowroot starch.
Ingredients:
- 2-3 lb chuck roast (got mine from @yellowumbrellaprovisions)
- 1 tbsp olive oil or ghee
- salt & pepper (season 🥩 heavily)
- 1 onion (diced)
- 6 cloves garlic
- 4 large carrots (diced)
- 1 tbsp dried Rosemary
- 1 tbsp dried thyme
- 1 tbsp tomato paste
- 1/4 cup coconut aminos
- 28 Oz crushed tomatoes
- 2 bay leaves
- 2 cups bone broth
- 8 Oz mushrooms
- 1 box @jovialfoods Cassava pasta
- Parsley to top pasta
- Parmesan cheese top pasta
Instructions:
- Season your chuck roast heavily with salt and pepper. Add olive oil to Dutch oven over medium high heat and sear your roast on both sides. (~2 min per side…don’t move it!)
- Remove beef and set aside. Add carrots, onion, garlic to pan with beef fat and cook for 3-4 minutes until onions are translucent. Add tomato paste and coconut aminos and stir.
- Add bone broth, bay leaves, and crushed tomatoes and then place your beef back in the pot and get it comfy. It should be mostly submerged but feel free to add more broth if needed.
- Cook on 275°F for about 3.5-4 hours. After the first 1.5 hours I turn the roast over in the pot. Add mushrooms at around the 3rd hour and check the tenderness of your beef with a fork to check for doneness. You’ll know when it’s done when it’s ready to fall apart when you fork it.
- At this point you could enjoy it on its own, make a grilled cheese with the beef, eat it over polenta or mashed potatoes, or bathe in it. I like making it into a pasta. Cook your pasta and add a big scoop of the sauce, meat, parsley, and Parmesan cheese. Can’t beat it!
