How an Indian chef cooks Gourmet burgers!
Bet you didn't expect a recipe like this on the channel! But when you find a recipe this good it's hard not to share it! and so simple too!

Ingredients:
Serves 3
3 Brioche buns
500g lamb mince
2 medium sized onions - sliced into rings
Butter
1 tbsp Balsamic vinegar
3 tsp sugar
4 tbsp vegetable oil
6 slices good quality american cheese
mustard, mayonnaise and ketchup (optional/to taste)
Method:
First we prep the burgers, with a circular mould or similar substitute, press the lamb mince into 3 thick patties.
before we start cooking the burgers we are going to get our onions started, add a good tablespoon and a bit of butter to the pan and turn up the heat to medium/high and start it melting. Add 2 tablespoons of vegetable oil to help prevent the butter from burning later.
Add in your onion rings and stir while cooking for a minute or so, after about 2 minutes or so the onions will start to soften up a little, then the 3 teaspoons of sugar goes in. continue stir frying for a few more minutes until they start to begin going golden/brown around the edges and look translucent.
In goes our tablespoon of Balsamic vinegar, don't drown it in the stuff because it will ruin our sweet flavour that were aiming for.
stir for a minute and set aside on a low heat.
Now the meat. In your cast iron pan or equivalent, add 2 tablespoons of oil and make sure the pan is coated with it, turn up the heat to medium/high.
Salt and pepper the face up side of the burgers generously before adding them to the pan salt and pepper side DOWN. Do not move them for a good 4-5 minutes at least as the crust develops. While you are waiting you can salt and pepper the other side of the burger.
While you wait check on your onions, move them about so they don't stick to the bottom of the pan. add a splash of water if they are cooking too fast for your liking. If they look done you can remove them from the heat entirely.
When you see the brown crust developing on the bottom into a wonderful dark brown, flip them over and repeat for 4-5 minutes on the other side.
Now the burgers should be more or less cooked through, add your american cheese 2 slices per burger and cover your pan, you can add a splash of water if you want to help melt the cheese properly. Turn the heat OFF.
While your burgers are resting the required 5 or so minutes, finish off the onions, you can turn the heat back up if you think they need more time to cook but they should have been cooking for a good while at this point and the slower cooking process allows the sugars to develop nicely without burning them.
Toast your buns if that's your preference, just a good knob of butter in a pan and toast the insides on a medium heat for about 30 seconds.
onto your buns add about 1/2 a teaspoon of mustard, mayo and ketchup. then on top of that your burger with cheese, then a spoonful of balsamic glazed onions over the top. enjoy with a side of triple fried chips! (recipe coming soon)
