Chicken Noodle Soup using a whole Chicken! | COOK WITH ME

Recipe:
Ingredients
• 4-5 pound whole chicken (roasting hen or stewing hen)
• 8 cups water
• ½ cup chopped onion
• 2 teaspoons salt
• ¼ teaspoon pepper
• 1 bay leaf
• 5-6 small carrots, chopped
• 4 stalks of celery, chopped
• Rest of onion, chopped
• 4 cloves of garlic, minced
• ½ tsp dried thyme
• 2 heaping cups egg noodles
• 1 tablespoon dried parsley
• Additional salt and pepper to taste
Instructions
1. Place the chicken in a large dutch oven or stock pot.
2. Pour the water over the top of the chicken.
3. Add the ½ cup of onion, salt and pepper.
4. Bring to a boil then reduce the heat.
5. Simmer, covered, until the chicken is tender. About 90 minutes.
6. Remove the chicken from the broth and allow it to cool.
7. Measure the broth to make sure you have at least 6 cups of liquid. If you don’t, add additional chicken broth to make 6 cups. **Note I did not do this step**
8. Add the carrots, celery, rest of the onion, garlic, bay leaf, and thyme to the broth. Bring it to a boil.
9. Once the broth is boiling, add the noodles and cook about 8 minutes until the noodles are tender.
10. While the noodles are cooking, remove the meat from the bones. You should have about 4 cups of meat. Discard the bones. Shred the chicken into bite size pieces. **Note: I did add the skin for flavor, but you can discard it.
11. After the noodles are cooked, stir in the chicken and dried parsley.
12. Heat through.
13. Enjoy!

Just a note this soup was light on the broth so be aware, which is why I took out the simmering I did in the video while I was shredding up the chicken.
