How to Make Almond Shortbread Crust

Learn how to make this classic French shortbread crust, also known as pate sablée. It is usually used to make sweet tarts.

This classic French crust (Pâte Sablée) has the characteristic of having a high percentage of butter in it. It must be chilled before rolling out due to this; it is a fragile crust, tricky to manipulate.

This is a variation of the typical recipe, because it has almond flour, which makes it even better. This was adapted from the Pâte Sablée recipe I learned at Ecole Lenôtre in Paris! The best pâte sablée I ever tasted. If you want to make it even better, you can add a little vanilla.

It is normally used to make sweet tarts: berry tart, lemon meringue tart, the sky is the limit.

The technique used to make this crust by hand can be replicated for other crusts !
