Sausage Making #ASMR #shorts

𝐒𝐭𝐞𝐩𝐬:
→ Trim sinew and connective tissue off of meat
→ Cut meat into pieces that will fit into your grinder.
→ Open up Stuffer's sausage seasoning package (be sure that you use the appropriate amount of cure for the weight of meat).
→ Weigh meat (this package called for 9lbs total). Good rule of thumb is to use 1/3 fat. Game meat is super lean so I always add pork backfat to my sausages (and hamburgers)
→ Mix extra contents of cure package and seasonings into the 9lbs of meat and fat and mix well
→ Put meat in fridge (it needs to be super cold)
→ Removable blade part of grinder is kept in freezer so it’s super cold and keeps meat cold as it grinds it
→ Grind very cold meat -
→ Mix meat after grinding until sticky
→ Stuff sausages
→ Shape into individual sausages
→ Smoke sausages
