Teochew Crystal Dumplings / 潮州粉果

These are the teochew crystal dumplings that my grandmother used to make. Once steamed, their skin becomes translucent like the Ha kao one’s.
Their stuffing offers a great variety of flavors and textures.

👩‍🍳 Ingredients for 40 dumplings
Dough :
240g wheat starch
140g tapioca starch
60g potato starch
½ tsp salt
50cl boiling water
1 tbsp vegetable oil

Stuffing :
300g chicken thighs
20g small dried shrimps
2 shiitake mushrooms
70g tofu soybean curd
70g bamboo shoots
50g roasted peanuts
1 carrot
40g salted preserved radish
50g shallots
200g garlic chives
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp shaoxing cooking wine
½ tsp fiver spice powder
¼ tsp ground pepper
¼ tsp salt
1 tsp sugar
1 tsp sesame oil
½ tsp cornstarch
2 tbsp vegetable oil
6 tbsp shiitake mushroom soaking water
