EASY Indian Chicken Curry Recipe 🇮🇳

Indian Chicken Curry Recipe 🇮🇳
Ingredients:
– 750g bone-in chicken curry cuts
– 300g sliced onions
– 1 tbsp ginger paste
– 1 tbsp garlic paste
– ½ tsp turmeric
– 1 tsp red chilli powder
– 1 tsp Kashmiri chilli powder
– 1 tsp cumin powder
– 1 tsp coriander powder
– 2 tbsp yoghurt
– 2 tbsp oil
– 4 green cardamom
– 4 cloves
– 1 inch cinnamon stick
– 2 bay leaves
– 100g roma tomatoes (pureed) or 4 tbsp store-bought passata
– Salt to taste
In a bowl, mix yoghurt, turmeric, red chilli, Kashmiri chilli, cumin, and coriander powders. Add chicken and coat well. Marinate for 30 minutes.
Puree the tomatoes or use passata.
Heat oil in a pan and add cardamom, cloves, cinnamon, and bay leaves. Once aromatic, add sliced onions. Sauté on medium heat until golden brown. Add ginger and garlic pastes, cook until the raw smell disappears.
Add marinated chicken. Cook on high heat until it changes color, then lower the flame and cook until oil begins to release.
Add tomato puree and salt. Mix well. Cover and cook on low heat, stirring every 10 minutes to prevent sticking. Add a splash of hot water if needed.
After about 30 minutes, the chicken should be fully cooked and tender. Let it rest for 30 minutes before serving.
Garnish with fresh coriander. Serve with rice or Indian bread.
Note: You can use boneless chicken, but reduce the cooking time. Bone-in chicken gives better flavor.
