Ingredients:
1 kg ox tripe/tuwalya ng baka, cut in to strips
Salt as needed
1 tsp black peppercorns
3 pcs bay leaves
Water as needed
6 garlic cloves, minced
2 medium onions, strips
2 bell peppers, 1/2 inch squares
1 large carrot, large dice
3 chorizo de bilbao, thinly cut
olive oil, as needed
1/3 cup tomato paste
1/3 cup canned tomatoes
1/2 cup cooked garbanzo beans
2 tbsp butter
salt and pepper as needed

Procedure:
1. Place your cleaned and sliced ox tripe in a pressure cooker with bay leaves, black peppercorns, and enough water and salt. Cook under pressure for 1 hour. Alternatively, you can simmer it in a pot until tender. Approximately 2 hours. Once tender, separate the meat from the stock. Set aside.

2. Saute your garlic in olive oil until lightly browned

3. Add onions and saute until translucent.

4. Add your carrots, bell peppers, and chorizo. Saute for 1 minute.

5. Add tomato paste and cook for 2 minutes.

6. Add canned tomatoes and cook for an additional 1 minute.

7. Add your cooked tripe and enough tripe stock to cover.

8. Simmer for 10-20 mins, making sure that nothing is burning at the bottom of your cooking vessel. What we are aiming for here is to reduce the stock enough so that the gelatin from the tripe itself will thicken the sauce. No starch needed.

9. Add canned garbanzo beans. Turn off the heat.

10. Add butter and stir it until melted.
11. Adjust seasoning as needed.

12. Serve with rice or toasted bread.
