3 1/2 lbs. beef shanks & beef chuck
4 cloves of garlic
1/2 onion
1 t. salt
few sprigs of thyme
3 bay leaves
1 t. Mexican oregano
1 whole clove
tiny smidgen of ground cinnamon
1 t. beef bouillon paste
water to just cover meat

Chili Paste
4 guajillo chilies
1 pasilla or ancho pobano
1 clove of garlic
1 quarter of a medium onion
hot water to cover

chopped onions
chopped cilantro
chopped radishes
lime wedges
