Paula's Palate Hot Crab Dip:
1/2 pound cream cheese, room temperature
2 scallions, minced
3 tablespoons whipping cream
3 tablespoons horseradish
2 tablespoons fresh dill
1/2 teaspoon cayenne, pepper, or to taste
1/4 teaspoon kosher salt
1/2 pound lump crabmeat, picked over for bones/cartilage
Preheat oven to 350 degrees Fahrenheit
Beat the softened cream cheese in a large bowl with the scallions, whipping cream, horseradish, dill, cayenne, and salt. Fold in the crabmeat.
Spray a four-cup ovenproof tureen with cooking spray and scrape the crabmeat mixture into the tureen.
Bake the dip on the lower third of the oven for 25 minutes or until bubbly hot and light golden on top. Serve the hot spread with little sourdough toasts or crackers. If you're making the dip for a party, triple this recipe to fill a large chafing dish.
