Jollof rice (Zimbabwean version served with sweet chilli chicken & spinach)

I have never been able to really eat jollof rice from the West as I cannot have really spicy food so I have done my Zimbabwean take on it and was pleased with the results especially for a first attempt after watching many videos I was inspired by. @zeelicious foods check her channel out she’s good.
