Kairi Rice (Raw Mango Rice)

Ingredients:
• 1 raw mango, peeled and grated
• 2 tbsp cumin seeds
• 8–10 garlic cloves
• 2 whole red chillies
• 2 tbsp Kashmiri red chilli powder (for masala)
• 1 tbsp Kashmiri red chilli powder (for rice)
• 2 tbsp oil
• 1 tsp black mustard seeds
• 1 tbsp urad dal
• 1 tbsp chana dal
• A few curry leaves
• ½ cup green peas
• 250 g cooked rice
• ½ tbsp turmeric powder
• Salt to taste
• Fresh coriander leaves, chopped

Method:
1. Dry roast the cumin seeds in a pan. Add garlic and whole red chillies and roast together.
2. Grind the roasted mixture and mix in 2 tbsp Kashmiri red chilli powder to make the masala.
3. Heat oil in a kadhai. Add mustard seeds and let them splutter.
4. Add urad dal, chana dal, and curry leaves. Sauté until golden.
5. Add the ground masala and cook for a minute.
6. Add green peas, a little water, and cook until peas are tender.
7. Stir in turmeric powder and grated raw mango. Mix well.
8. Add cooked rice, 1 tbsp Kashmiri red chilli powder, and salt. Toss gently to combine everything.
9. Finish with chopped coriander leaves.
10. Serve hot.
