UGLY but DELICIOUS! Upside Down PEACH Cake | Summer Food Recipes

This peach upside down bundt cake is the epitome of summer! It comes together really easily and the pay off is a moist delicious, fragrant, peachy cake. You won’t regret making it!

Here is the full recipe:

Ingredients
1 cup (2 sticks) and 1/4 cup (1/2 stick) unsalted butter divided
1/2 cup brown sugar
5 medium fresh peeled peaches
1 3/4 cups sugar
2 large eggs
1 3/4 cups and 1/4 cup flour divided
1 tsp baking powder
1/4 tsp salt
1 cup (8 oz) sour cream
1 tsp vanilla extract

Directions
Preheat oven to 350 degrees.
Spray Bundt pan heavily with cooking spray.
Combine 1/4 cup (1/2 stick) butter and 1/2 cup brown sugar in a small saucepan.
Cook on low heat until melted and pour into the greased Bundt pan.
Cut peeled peaches into quarters, removing the pit.
Place approximately 12 quarters at the bottom of the Bundt pan in the sugar syrup so they fit snugly at the bottom.
Dice remaining peaches and reserve 1 cup to put into the batter.
Cream the remaining 1 cup (2 sticks) of butter with the sugar for around 4 minutes until it is light and fluffy.
Add eggs one at a time mixing between each addition.
Combine 1 3/4 cups flour, baking powder and salt and mix.
Add half of the flour mixture and sour cream to the creamed mixture alternately, starting and ending with the flour.
Combine 1/4 cup flour with the diced peaches so the peaches are coated.
Add the peaches and vanilla and fold into the mixture.
Spoon the batter over the peaches in the Bundt pan.
Tap the pan on the counter top gently to settle the batter between the peaches.
Bake for 55 minutes or until a toothpick inserted comes out clean.
Let the cake cool on a wire rack for 5 to 10 minutes.
Unmold the cake while it is still slightly warm so the sugar will not stick to the sides of the pan.
Let cake cool completely and then glaze and enjoy.

Glaze (Optional)
1/2 cup confectioner’s sugar
2 tsp milk
1/2 tsp vanilla extract
1 pinch of salt
Combine sugar, milk, vanilla and salt and whisk to combine thoroughly.
