Lentils Lucky NYE Italian Recipe:
1 1/2 cup dry lentils
1 small onion, finely diced (additional shallot and spring onion)
1 carrot, peeled and thinly sliced
1 celery stalk, thinly sliced
3 tablespoons extra virgin olive oil
1 teaspoon salt
1 8-oz. can tomato sauce
1 bay leaf
rosemary
