One-Bowl Chocolate Buttermilk Loaf Cake
Use a metal or silicone loaf pan... A glass one can superheat the chocolate rendering the cake bitter.
Ingredients:
1/4 cup canola oil
1 1/2 cups all-purpose flour
1 cup sugar
1/3 cup sifted unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup regular buttermilk (do not use fat-free)
1 teaspoon vanilla extract
Direction:
Position the rack in the center of the oven and preheat the oven to 350 degrees. Oil your loaf pan with a small amount of canola oil. Dust the pan evenly with flour before shaking out the excess flour.
Whisk together all of your dry ingredients in a large bowl. Then stir in all of your wet ingredients with a wooden spoon or a spatula... do not use a mixer to prepare this batter.
Pour the batter into the prepared pan... Smooth it to the corners and bake until soft and firm... Until a toothpick inserted into the center of the cake comes out with a few more strings attached. Cook for 1 hour.
