COOKING A TRADITIONAL SCOTTISH RECIPE WITH MY MOTHER IN LAW *YUMMY*

We are back at it again! Since you all have loved seeing mummy ji so much and we have enjoyed filming them so much, we thought we would bring you another cooking video with mum! This is mums own recipe she's been making for years, it looks so good, it smells so good and it tastes so good! We really hope you enjoy this one, and let us know in the comments below if you have any more suggestions for us to cook!

THE RECIPE:

Ingredients:

2 tablespoon olive oil approximately
1kg lamb mince (or vegetarian mince)
1 large onion, grated
1 large carrot, grated
2 cloves garlic
2 tablespoon worcestershire sauce
1½ tablespoon tomato paste
2 branch of fresh thyme leaves
1 branch fresh rosemary, chopped
2 cup chicken stock
1kg potatoes (peeled and cut into chunks)
2 egg yolks
¼ cup cream
4 tablespoon butter
6 tablespoon parmesan cheese, grated

Directions:

To prepare, peel and grind onion, carrots, and garlic, and pick herbs from branches. Heat the oil in a large pot until hot, then add in mince (you can add salt and pepper here to season). Fry this for around 5 minutes on rather high heat, remembering to break up the lumps of mince while frying. Next, add in the onions, carrots, and garlic and stir well. Leave this to simmer for a few minutes, then add in the worcestershire sauce, tomato puree, and rosemary and thyme, and cook for a few minutes stirring constantly to make sure nothing sticks to the pan.Next, add in the chicken stock, and bring this to boil and simmer until sauce is thick and not runny, and add more salt and pepper to your taste here.

Whilst this is boiling, peel and chop the potatoes, and add them to salted boiling water on the stove to simmer until soft. When soft, drain them and put back on low heat to dry them out. Next, add in the egg yolks, cream, butter, and 2 tablespoons of parmesan cheese.

Once this is fully done, spoon the mince mixture into an ovenproof dish, and then put the mashed potato mixture over the top, coat with the extra cheese, and bake at 180 degrees for around 20 minutes or until the cheese has gone golden brown.
