set those aside. Great for making a vegetable stock or making an asparagus puree. I do have two bundles here and it's kind of where that color change happens. That's kind of all right. So our veggies are prepped. All right. So this is a whole side of salmon and it does come with the skin on. Now you can choose to leave the skin on or you can remove the skin. I'll show you a couple of tips to do that. One of the things that I do like to do first is I like to take my knife and I'll take the edge of the knife and just run it with the grain of the fish and I'll pull up a little bit of what's on the surface. By doing this, you're removing any of the bacteria, any of the extra flavor stuff. One of the things that I learned is whenever they're packaging these fish, they're pulling them out of big cartons with fillets stacked on top of each other. They're clean, but this just tightens it up a little bit more and gives you just a little bit better surface to work with. All right, and that's all it takes, guys. Just a couple of passes. Use your paper towel. You'll get the fish off of there. Kind of the width of the knife is a good guide for your portion size, right? I want to take off, since we're going to grill
