Surprising My Mom By Making Her Favorite Foods! Soufflé Pancakes, Siu Mai, Banh Cuon
In today's video, we are surprising my mom by making her favorite foods! It was Mother's Day recently, so I decided to cook for her to show my appreciation. I have not cooked in 3 years so this was a challenge forsure. Hope you enjoy!

RECIPES:
Soufflé Pancakes
Ingredients:
- 3 eggs
- 4 tbsp flour
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp milk
- 3 tbsp sugar
Instructions:
1. separate eggs
2. whisk egg yolks
3. add 2 tbsp milk
4. mix well
5. add 1 tsp vanilla extract
6. mix well
7. sift flour and baking powder into mixture
8. mix evenly using whisk until no flour clumps
9. beat egg whites
10. add sugar slowly in 3 parts
11. add 1/3 meringue to yolk mixture, mix quickly
12. fold in next 1/3 meringue, then repeat
13. put oil/cooking spray
14. put parchment paper molds and fill with batter
15. put 1tbsp water & cover
16. cook for 3-4 min
17. flip and add 1tbsp water & cover
18. cook for 3-4 min
Siu Mai
Ingredients:
- wonton wrappers
- 1 lb ground pork
- 1/2 lb shrimp, peeled and deveined
- 2.5 tsp sugar
- 1 tsp soy sauce
- 3/4 tsp salt
- 2 tbsp diced green onion
- carrot (optional)
Instructions:
1. mix pork, salt, soy sauce, sugar with a spoon or hands until it becomes pasty
2. add mushrooms, shrimp and green onions and mix
3. fill wontons (watch video)
4. use butter knife to smear more filling in to fill full wonton
5. place on work surface and push down to flatten base and use fingers to shape into a round
6. line bamboo steamer with paper
7. place siu mai inside
8. bring water to simmer over medium high heat
9. put bamboo steamer inside
10. steam for 8 minutes
11. remove steamer from pan
12. remove lid and place carrot in the middle of each dumpling
Banh Cuon
Ingredients:
- rice paper sheets
- 1 lb ground pork
- 1/2 onion
- wood ear mushroom
- cha lua (Vietnamese ham)
- basil
- fish sauce
Instructions:
1. soak rice paper sheets in water + a little bit of oil for 20-30 min
2. finely dice onion
3. finely dice wood ear
4. season ground pork with salt and pepper and mix well
5. heat pan over medium heat
6. add pork and wood ear
7. cook until pork has brown while breaking the meat into small pieces
8. add the onions and cook until softened
9. transfer to bowl
10. roll 1-2 spoonfuls of meat into rice paper and roll it up
11. microwave for 90 seconds or steam for 5 min
12. cut rolls into smaller pieces
13. arrange vegetables and Vietnamese ham onto plate
14. serve with fish sauce
