When I was a kid, we’d wake up before the sun to grab fresh bagels — still warm, the air thick with that toasty, yeasty smell. Back then, I didn’t know their full story, that they came from Jewish immigrants who baked before dawn too, rolling dough into circles of survival and hope.

From Kraków’s cobblestones to New York’s Lower East Side, bagels rose from the hands of those seeking freedom. They fed families, built futures, and became the “American classic” we now take for granted.

So yeah, that Sunday brunch staple? It’s Jewish. It’s Polish. It’s immigrant.

And every bite carries history.
