Thai Green Curry - Easy and Authentic Taste!!!
Ingredients:
1 cup Thai Basil
3 Cloves Garlic, Minced
2 Small Shallots
2 pcs Kaffir Lime Leaves, cut into several pieces
3 Thai Red Peppers, sliced
8 - 10 pcs Thai Eggplants, quartered
2 lbs. chicken pieces
1 can Bamboo Shoots, sliced and washed
2 - 3 tbsp. palm sugar
1 small can of Green Curry Paste, 4 oz.
1 can Coconut Cream
1 can Coconut Milk
water about 1 cup
Fish Sauce to taste
Procedure:
1. Saute Garlic and shallots
2. Add Green Curry Paste
3. Add the coconut cream and coconut milk, let it boil.
4. Add the Chicken pieces, kaffir lime leaves, and palm sugar. Cook for about 20 to 30 minutes. Add water if too thick.
5. Add the eggplants and bamboo shoots. Cook to desired softness. Season with fish sauce.
6. Add the Red Peppers.
7. Add the Thai Basil leaves. Stir then turn off the heat.
8. Serve over steamed rice.
