Fermented Hot Chilli Sauce -Salt Koji-

This is the perfect recipe for a beginner. If you are just starting out or have never made a fermented food in your life this one is not complicated.

It requires only 4 ingredients, will be ready in a month and you don’t need any fancy equipment. You can use any hot pepper or mild peppers you like for this recipe. This method allows the hot sauce to develop complex flavors you can’t get in a traditional recipe.

1kg long red chillies
500ml Apple cider vinegar
200g Salt koji
10g garlic cloves
