Upgrading And Installing Linux On A 2012 Mac Mini

I found my families old 2012 Mac Mini. Time to give it an upgrade and...you guessed it, put Linux on it. I am then going to turn it into an arcade emulator to plug into my main TV. Will Linux allow it to work better? Will running old arcade ROMs on a big flat screen look OK?
