Cheese Roll with Autolyse Method / Without using Mixer/ Autolyse Method/ Soft Dough Cheese Rolls

Disclaimer:
I am not a Bread expert but I just want to share the Autolyse Method. I have heard about this and tried it. This is my first time to make bread without using a mixer, and with Autolyse Method it is easier for me to knead the dough, no sweat at all.

You can also use mixer and Autolyse Method at the same time. The good thing here, your mixer saves the time to mix it. No over heating.

You may use your favorite bread recipe with Autolyse Method.

CHEESE ROLL with Autolyse Method

Ingredients:
To Hydrate the Flour

250g. All Purpose Flour
110 ml Water
25g Powdered MIlk
45g Sugar
1 pc Egg
3g. Instant Yeast
¼ tsp Salt
40g Butter
1box Eden Cheese

1. In a bowl combine, Sugar, Milk, Egg & Water (reserved 15ml of Water for later).
2. Mix well, until Sugar and Milk dissolve.
3. Add Flour mix well until shaggy and knead into a dough ball.
4. Cover with cling wrap and leave to Hydrate for 30 to 40 mins.
May prepare other ingredients while waiting.
5. Pour the rest of the water in yeast and salt. Mix well to dissolve, this is to ensure that everything will incorporated to the flour while kneading later. Set Aside.
6. After 30 mins, the dough has develop a bit of elasticity.
7. Add the Yeast, mix to combine.
8. Add the salt. Mix to combine.
9. Butter and knead to incorporate, Transfer to working table.
10. The dough will absorb the Butter while kneading.
11. Knead the dough until smooth.
12. Check the window pane test.
13. Greased the Dough and place in a greased bowl. Cover with cling wrap.
14. Place in a warm place. Let rise until double in size for 1 hr to 1.5 hrs. (1st proofing).
15. After 1 hour, Do the dimple test and punch down the Dough to deflate.
16. Butter the surface, flatten the dough and roll towards you.
17. Divide into two, cut into small pieces.
18. Roll it and let it rest for atleast 10mins.
19. Prepare Cheese for filling. Cut into strips.
20. Butter the surface. Flatten the dough ball. Use rolling pin, from middle upward, middle downward, middle sidewards. Rectangular shape.
21. Place the cheese at the bottom. Fold the bottom dough towards the cheese and side dough towards the cheese.
( this is to seal and prevent the cheese from melting outside the bread)
22. Carefully roll it, pinch the seam to seal.
23. Place it in a baking pan with parchment paper. After rolling all the Dough, cover the baking pan with cling wrap and let the dough for 30 mins. (2nd proofing)
24. After 30 mins, Brush Cheese Rolls with milk for the Golden and shiny effect.
25. Bake in a preheated oven for 15 mins at 180C.
26. Let it cool. Onced cooled down brush it with butter and roll it in sugar,

This recipe makes 16pcs of CHEESE ROLLS at 30g. each.
