Red Velvet Cake Topped with Cream Cheese Frosting 红色天鹅绒蛋糕

Learn how to quickly bake a super moist and flavorful Red Velvet Cake with some common ingredients such as all-purpose flour, buttermilk, cocoa, baking soda and vinegar.

INGREDIENTS:
Cake Batter:
2 1/2 cups (320 g) all-purpose flour
1 1/3 cup (286 g) granulated sugar
3/4 cup (188 g) vegetable oil (any vegetable oil of your choice)
3 large eggs (approx. 185 g)
1 1/4 cup (300 ml) buttermilk
1 tbsp cocoa powder
2 tbsp red food coloring
2 tsp vanilla extract
2 tsp baking soda
1 tsp white vinegar
1/2 tsp salt
Frosting:
8 oz (226 g) cream cheese
4 oz (113 g) unsalted butter
1 1/2 cup (185 g) powdered sugar
1 tsp vanilla extract
1/2 tsp salt
INSTRUCTIONS
Prepare the cake batter:
1. Grease and line 2 cake pans with parchment paper. Pan size is 8” (20.3 cm.) round and 2” (5 cm) deep.
2. Sift flour into a mixing bowl
3. Then add the rest of the ingredients (except baking soda and vinegar)
4. Stir the mixture and combine
5 . Lastly add the baking soda and vinegar. Note, the vinegar helps give the baking soda a lift and also helps boost the lively red color in the cake.
6. Next use a electric mixer and mix for about 2 minutes or until there are no lumps in the batter. Don’t mix too long or you will have excessive large bubbles in the batter.
7. Pour batter into prepared pan. Divide the batter evenly for the two pans.
8. Tap the pans firmly on the counter a few times to release any large trapped air bubbles.
9. Bake in a preheated oven at 350° F (180°C) for 30 minutes or until test skewer comes out clean.
10. Remove pans from the oven and cool on wire rack for 2 hours before frosting.
Prepare the cream cheese frosting:
1. Mix together the room temperature butter and icing sugar with a electric mixer on high speed until fluffy, about 1 minute.
2. Add salt, vanilla extract and cream cheese and mix with medium speed until well combined, about 1 minute.
The consistency of the frosting should be medium stiff and spreadable.
Note: While bringing the cream cheese to room temperature, lay it on a piece of paper towel to soak up liquid. The less liquid you put into the frosting, the better it is for it to stay stiff and spreadable.
