Easy Puerto Rican Sofrito Recipe!

One of my favorite things about cooking Puerto Rican food is throwing in a bunch of homemade sofrito! It gives an incredible flavor to rice, beans, meats, soups, as well as many other dishes. I am going to show you how to make this from scratch to be stored in the fridge or freezer and used in any recipe of your choosing to make it taste UNBELIEVABLE and get your entire house smelling like Old San Juan! 

This recipe is a signature in my family. You will never buy sofrito from the store after making your own. The difference is in the way your food taste. This video shows how I make sofrito and also store it for the best results. Please note that I love garlic. Hence, that’s why I use 8-10 heads (sometimes more..lol). Adjust the ingredients according to your own taste.

Sofrito Recipe:

Ingredients:
1. Cachucha Peppers (bunch)
2. Culantro or Cilantro (bunch)
3. Onions (2 large)
4. Red Peppers (1 large)
5. Green Pepper (1 large)
6. Garlic (8-10 heads)
7. Oregano (2 tbsp - fresh chopped)
8. Olive Oil (1/2 cup)
9. Salt (1 tbsp)
10. Pepper (1 tsp)

Instructions:
1. Prepare
1. Wash all of the vegetables
2. Cachucha Peppers - cut in half and remove seeds
3. Culantro Herb - remove stem ends and cut remaining into fours (makes it easier in food processor) (smells so good)
4. Oregano - take leaves off fresh stems and roughly chop
2. Blend & Pile (chunky is a matter of preference.. I love texture)
1. Cachucha Peppers
2. Culantro or Cilantro (add 2-3 heads of garlic)
3. Onions
4. Red Pepper
5. Green Pepper
6. Garlic (6-8 heads)
7. Oregano (previously chopped)
8. Olive Oil (gives it good consistency for freezing)
9. Salt
10. Pepper
3. Mix well
1. After it is all mixed, taste and adjust accordingly. If you like more pepper, garlic, etc.. add it!
4. Store
1. Refrigerate in a mason jar (use within 2 weeks as freshness will go away)
2. Freeze in silicon ice trays; transfer frozen cubes to a sealable plastic bag
1. Note: If you have ice trays that are smaller, use those. Fill them according to how you will use them for one use. Basically, how much will you use when you are cooking.
