Thai Basil Chicken – A popular Thai dish made with tender chicken, fresh basil leaves, garlic, and flavorful sauces, creating a perfect balance of savory and aromatic flavors.
Thai Coconut Custard – A creamy and delicious dessert made with coconut milk and traditional Thai-inspired ingredients, offering a rich and silky texture.
Thai Salad – A fresh and vibrant salad packed with crunchy vegetables, herbs, and a zesty dressing that complements any meal.

RECIPES FEATURED
THAI BASIL CHICKEN
Ingredients:
Chicken breast cubed 300gm
Ginger garlic 1 tbsp pounded
Garlic minced 2 tbsp
Spring onion 1 cut into 1" long
Red fresh small chilli 1
Sauce:
Oyster sauce 2 tbsp
Soya sauce 2 tbsp
Brown sugar 1 tbsp
To serve :
Boiled rice
Roasted sesame seeds
Few basil leaves
Method:
Marinate the chicken cubes with the ginger garlic paste. Mix the sauces in a bowl with water and keep it aside. Heat oil in a wok, fry the marinated chicken pieces and set aside. In the same wok add another spoon of oil,add garlic and chilli and cook for a few seconds. Add the white part of the green onions and chicken and just stir fry. Add Sauces and cook for 1 minute. Toss the greens of spring onions and add few basil leaves. Stir until just wilted, then serve immediately with rice. Sprinkle a few toasted sesame seeds.
THAI COCONUT CUSTARD
Ingredients
1 can Coconut Milk
1/4 teaspoon nutmeg
2 eggs
2 egg yolks
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon coconut essence
1/2 cup coconut flakes
Method
Add coconut Milk and nutmeg to saucepan. Cook over medium heat just until it starts to steam. Beat eggs, yolks, sugar and salt well. Very slowly, drizzle warm coconut milk into egg mixture, stirring constantly. Stir in coconut essence. Pour coconut mixture into a greased dish and sprinkle with coconut flakes.
To make a water bath, place baking dish in larger pan. Pour hot water into pan until it reaches half way up outside of baking dish. Carefully, place pan in oven. Bake at 175 degrees C for 40-50 minutes or until custard is just set. Remove from water bath and set custard on wire rack to cool. Cover and refrigerate.
THAI SALAD
Ingredients:
Peanut Dressing:
¼ cup peanut butter
2 tablespoons rice vinegar
2 tablespoons lemon juice
3 tablespoons oil
1 tablespoon soya sauce
2 tablespoons honey
2½ tablespoons sugar
2 garlic cloves, chopped
1” ginger, chopped
1 teaspoon salt
¼ teaspoon crushed red chilli flakes
2 tablespoons coriander leaves
Salad:
1 small cabbage, shredded
1/2 small purple cabbage, shredded
1 carrot, shredded
1 capsicum, thinly sliced
1 cucumber, thinly sliced
2 spring onions, thinly sliced
½ cup chopped coriander
Method
For the dressing, combine all of the ingredients in a blender and process until completely smooth. Refrigerate until ready to serve.
For the salad, combine all of the ingredients in a large bowl and toss to combine. If serving right away, drizzle the peanut dressing over top and toss; otherwise, serve the dressing on the side so the salad doesn't get soggy.
