I haven't done a what I eat in a day video in so long I thought it was time for an update to just share with you what I've been cooking lately even though it changes all the time 😅

*for the erewhon recipes I eyeballed everything and it turned out great so I think you can also just taste as you go and adjust by your preference (have fun with it!!)
RECIPES
---------------------------------------------------------------------------------
💫spicy tofu sticks
extra firm tofu (high protein tofu works best)
corn starch (optional)
soy sauce / tamari / coconut aminos
garlic
ginger
rice vinegar
sesame oil
chili flakes
dijon mustard
maple syrup
---------------------------------------------------------------------------------
🥗kale and white bean salad
kale
white bean (northern beans or cannellini)
avocado
pumpkin seeds (I didn't have any)
sunflower seeds
lemon juice
dijon mustard
hemp seeds
maple syrup
extra-virgin olive oil
salt & pep
---------------------------------------------------------------------------------
🥒🥬 summer Italian inspired pasta salad
red lentil pasta (adds a little extra protein, but regular pasta is just as great)
salami
parsley
red onion
cucumbers
red & yellow bell peppers
baby tomatoes
dressing (blended all ingredients in a blender):
1/2 cup Olive Oil
1.5 tbsp white vinegar
2 crushed garlic cloves
1/4 fresh parsley
1/2 tsp maple syrup
1.2 tsp salt
*just remember to adjust everything to your personal preference 🥰
