Recipe

Step 1: Make the Meat Tortilla
Ingredients
* 1 ½ lb Simple Truth Organic Chicken Breast
* 1 cup Simple Truth Raw Almonds
* ½ cup Simple Truth Strained Organic Greek Yogurt
* ½ cup Simple Truth Organic Mozzarella Cheese Shreds
* 3 Tbsp cornstarch
* ½ tsp salt

1) Add almonds to the food processor and pulse until well-ground. Add the rest of the ingredients and process on high for 1 minutes, until a smooth paste has formed.
2) Use a silicone spatula to spread an even layer of the chicken tortilla mixture across a silicone baking sheet (you can use parchment paper instead.) You want to form a rectangle that is about 12 inches long, 8 inches wide, and no more than ½ inch thick.
3) Allow the thin meat tortilla sheet to chill in the fridge for at least one hour.

Step 2: Make the Carne Asada
Ingredients
* 12 ounce Simple Truth Organic Ribeye Steak
* ¼ white onion, thinly sliced
* 2 cloves garlic, minced
* ¼ tsp salt
* ½ tsp paprika
* ¼ tsp chili powder
* ¼ tsp black pepper
* 1 Tbsp vegetable oil
* 1 lime, cut in half

1) Use a sharp knife to slice the ribeye into small cubes, no more than ½ inch on each side. Throw those steak bits into a large mixing bowl, then add your onion, garlic, salt, pepper, paprika, chili powder, and vegetable oil.
2) Using either your hands or a spoon (always wash your hands before and after handling meat!), massage the marinade into the meat. You can let this sit for up to 24 hours, or use right away, both taste great!
3) Heat a cast iron skillet (or any heavy-bottomed sauce pan) on high heat for at least 2 minutes. You want the pan to start smoking before adding your meat.
4) Add the meat in the pan, and let sear for at least 1 minute before touching it. Use a wooden spoon to stir the meat around and cook for about 3 minutes, until nicely charred but not cooked-to-death. Remove the pan from the heat, squeeze the lime juice over the meat, toss, then reserve for later.

Step 3: Roll & Bake & Guac
Ingredients
* 1 can Simple Truth Organic Spicy Black Beans
* 1 container Simple Truth Plant-Based Queso Dip
* 2 Simple Truth Organic Hass Avocados
* ½ Simple Truth Organic Roma Tomato
* 2 Tbsp finely chopped cilantro
* 2 Tbsp minced white onion
* ½ minced fresh jalapeno
* ½ lime, cut in half
* ¼ tsp salt
* 1 bag Simple Truth Organic Blue Corn Tortilla Chips
* 1 bottle Simple Truth Organic Jalapeno Hot Sauce

1) Preheat your oven to 400 degrees Fahrenheit. Add queso, black beans, and carne asada in an even, long strip across the meat mixture.
2) Use the silicone mat to fold the meat mixture over the filling, peeling the mat back once the meat sheet has folded over the filling. Use the mat to roll into a perfect cylinder, tucking the mat underneath itself so it provides pressure against the meat. Use a silicone spatula to poke into the exposed ends of the mat and smooth out the ends of the meat mixture to complete the cylinder. Bake for 25 minutes.
3) While the burrito is baking, make your guacamole. Slice the avocado in half and remove the pit. Use a spoon to scoop out the insides into a large mixing bowl. Dice the tomato and add it to the bowl along with the onion, cilantro, jalapeno, salt, and lime. Use a fork to mash the avocado and toss together.
Remove the burrito from the oven and let rest for at least 10 minutes before removing the silicone mat. Slice in half, and serve with blue tortilla chips and guac. Add jalapeno hot sauce to each bite.
