Perfect Sablé Cheesecake Base 🍰
Ingredients
• 1 Egg (room temp)
• 80g Butter + 50g Softened butter
• 50g Powdered sugar
• 160g Flour
• 4g Baking powder
Instructions
1. Mix: Cream room-temp butter and sugar. Beat in the egg.
2. Fold: Fold in flour and baking powder until a dough forms.
3. Prep: Spread dough 1.5cm thick. Freeze for 30 mins.
4. Bake: Bake at 160°C (320°F) for 20–30 mins until golden.
5. Crush: Let cool, then crush into fine crumbs.
6. Bind: Mix crumbs with 50g softened butter. Texture should be "plastic" and clump together.
7. Pro Tip: If too dry, add milk one tablespoon at a time until it holds.
