EGG PIE||MAE'S KITCHEN
For Dough, I’m using empanada dough recipe :

4 cups flour
1 teaspoon baking powder (disregard baking soda in the video)
3 tbsps sugar
1/2 teaspoon salt
1 cup cold butter
1 egg beaten
1/2 cup milk (evap or fresh)
6-8 tablespoons of cold water (or you can add more)
*1 egg beaten and 1/2 tablespoon of water for egg wash
Egg pie filling
6 egg yolks
1 cup evap
1 can condensed milk
1 tsp vanilla
1 tsp lemon juice
2 egg whites
•Scald evap for 2-3 minutes (not boiled). Set aside.
•Whisk egg yolks, add condensed milk gradually.
•Add lemon juice and vanilla. Mix well.
•Add scalded evap (warm) gradually. Set aside.
•In another bowl, beat egg whites until they form soft peaks.
•Fold in yolk and condensed mixture.z
•Pour in your prepared pie crust.
•Bake in preheated oven 350 F for 15-20 minutes, then lower heat 325 F until fully cooked. Do the toothpick test.
