Korean Cucumber Salad Recipe | Side dish
Here is a super easy and quick cucumber summer side dish recipe for anyone to try at home. It's packed with vitamins and high fiber making it the ideal dish for anyone trying to cut down a few pounds. This salad is so yummy that you'll keep making it over and over again!
Ingredients
3 medium cucumbers
3 garlic cloves minced
4 tbsp of toasted sesame seeds
2 tbsp rice vinegar (or white wine vinegar)
2 tbsp toasted sesame oil
2 tbsp dark soy sauce
2 tbsp brown sugar
2 tbsp Korean red pepper flakes (or chilli flakes)
Pinch of salt
Recipe
1. Remove the seeds from the cucumbers and slice into small pieces
2. Salt the cucumber and leave to rest for 15 mins then rinse in cold water and completely dry
3. Mix in the garlic, sesame oil, vinegar, soy sauce, brown sugar, pepper flakes and sesame seeds. Let it sit for 15 minutes before serving and enjoy!
