TEDD'Y'S TAKE ON A PERUVIAN SALTADO

Here's my attempt at a Saltado. Certainly not the traditional way to make one but very tasty all the same.

You can do as I do and change the ingredients where necessary, particularly with the sauces / pastes.

With the red pepper, put it in the pan a good 5 minutes before the end. If you use Roma tomatoes, put in at the very end.
