Green chilli & ginger (finely chopped) – 1 tbsp
Salt – as required
Turmeric powder – ½ tbsp
Kashmiri red chilli powder – ½ tbsp
Mixed vegetable masala – ½ tbsp
Roasted cumin powder – ½ tbsp
Chaat masala – ½ tbsp
Red chilli powder – ⅓ tbsp
Fresh coriander leaves – chopped
Lemon juice – to taste
For Dough:

All-purpose flour – 1 cup
Salt – ½ tbsp
Ghee – 2 tbsp
Water – as needed
For Slurry:

Cornflour – 3 tbsp
Oil – as needed

Method (Step-by-Step):

1. Prepare the Aloo Masala (Stuffing): Start by boiling the potatoes until soft (about 15 minutes in a pressure cooker or 20 minutes on stovetop). Peel and mash them smoothly. In a pan, heat 1 tbsp oil over medium flame. Add cumin seeds, fennel seeds, and crushed coriander seeds – let them splutter for 30 seconds to release those aromatic flavors (this is called tadka in Hindi!). Toss in the chopped green chilli and ginger, sauté for 1 minute. Now mix in the mashed potatoes, salt, turmeric, Kashmiri red chilli powder, mixed vegetable masala, roasted cumin powder, chaat masala, and red chilli powder. Stir well for 3-4 minutes until everything blends into a fragrant masala. Turn off the heat, add chopped coriander leaves and lemon juice for that zesty kick. Let it cool completely. Shape into 8-10 small balls or patties – set aside.

2. Make the Dough: In a mixing bowl, combine all-purpose flour, salt, and ghee. Rub the ghee into the flour with your fingers until it resembles breadcrumbs (this makes it flaky!). Gradually add water and knead into a smooth, firm dough (not too soft). Cover with a damp cloth and rest for 10 minutes.
Prepare the Slurry: In a small bowl, mix cornflour with oil to form a smooth, thick paste. Add a splash of water if it's too thick – it should coat the back of a spoon easily. This will give that extra crispy layer!

3. Assemble the Patties: Divide the dough into 8-10 equal portions. Roll each into a small disc (about 4 inches wide). Place a ball of aloo masala in the center, fold the dough over like a parcel, and seal the edges tightly. Gently flatten into a patty shape. Dip each stuffed patty into the slurry, ensuring it's fully coated for maximum crunch.

4. Fry to Perfection: Heat oil in a deep pan or kadai over medium-high heat (test by dropping a small dough piece – it should sizzle and rise). Fry the patties in batches, 3-4 at a time, for 4-5 minutes per side until golden and crispy. Drain on paper towels to remove excess oil.
5. Serve Hot: Plate them up with green chutney, tamarind sauce, or yogurt (dahi) on the side. Garnish with more coriander for that fresh touch!
