PORK ESTOFADO / ESTOFADONG BABOY
PORK ESTOFADO it means is a stewed pork, another Filipino favourite dish.It is similar to pork humba and adobo soft, juicy and tender. Best served with hot rice !
INGREDIENTS :
1 kilo pork belly, cut into pieces
4 tbsp soy sauce
4 tbsp vinegar
2 pcs bay leaves
1/2 tsp ground black pepper
1/2 tsp garlic powder
2 tbsp cooking oil
1 large carrot, diced
1 large potato, diced
3-4 pcs plantains, cut into pieces
1 onion, sliced
5 cloves garlic, crushed
1 1/2 cups water
1 pcs pork stock cube
2 tbsp tomato sauce
1/2 cup pineapple juice
1 cup pineapple chunks
In a small bowl mix soy sauce, vinegar, bay leaves, ground black pepper and garlic powder, stir .
Place the pork pieces in a ziplock bag and pour the sauce mixture, mix well and marinate in fridge overnight or at least 2 hours.
Drain the marinated pork and reserve sauce.
Heat 1 tbsp cooking oil in pan, medium heat.
Fry carrots for 5 minutes or until soft,dish out and set aside.
Follow the potatoes and plantains, dish out and set aside.
Heat 1 tbsp cooking oil in pan.
Fry pork until golden brown each side , dish out set aside.
In a same pan with oil , saute the onion and garlic for 2 minutes.
Add the marinated sauce, water and pork stock cube, stir for a minute.
Put back the fried pork to pan , cover and simmer for 30-50 minutes or until pork are tender, turning occasionally.
Add tomato sauce, stir.
Add pineapple juice, fried carrots, potatoes and plantains, stir for 2 minutes.
Add pineapple chuncks ,stir for another 2 minutes..DONE !
