材料:
大蛋 1隻
冰水190ml(連冰)
低筋麵粉130g
籽然粉 2至3茶匙
五香粉 1茶匙
花川椒粉 ½茶匙
八角粉 ½茶匙
黑芝麻 1湯匙
鹽1茶匙

Materials:
1 Large Egg
190ml Cold Water(include Ice cubes)
130g Cake Flour
2-3 Tsp Cumin Powder
1 Tsp Five Spice Powder
1/2 Tsp Sichuan Pepper Powder
1/2 Tsp Star Aniseed Powder
1 Tbsp Black Sesame
1 Tsp Salt

步驟:

1. 首先,將磨菇去蒂,用廚紙將磨菇抹乾淨,然後用刀在磨菇的背部界上十字;
2. 金菇菜切去根部,分開一蔬蔬備用;
3. 除去蝦頭及蝦殻,只保留蝦尾部份;
4. 蝦尾部份切齊整,用刀刮走蝦尾的髒物及水份,防止炸蝦時時濺油;
5. 切開蝦身,將蝦腸挑出;用刀切斷蝦的筋,以防炸蝦時蝦令變卷曲,上下面部做法一樣;
6. 用手指按壓蝦肉,令蝦身變長;
7. 低筋麵粉先過篩備用;
8. 在碗中加入凍水及冰塊,加蛋拌勻;
9. 加入調味料及黑芝麻
10. 輕輕攪拌後,加入麵粉,用攪蛋器輕輕攪勻(注意不要過份攪拌);
11. 完成麵糊後,在材料篩上低筋麵粉備用;
12. 在鍋內注入油,待油溫達致170至180度左右就可以炸物,可先在油放入少許麵糊作測試;
13. 磨菇先沾好麵糊,然後放進熱油炸約1-2分鐘;
14. 將沾好低筋麵粉的金菇,再沾上麵糊,用筷子弄走多餘的麵糊,放進熱油炸約1-2分鐘;
15. 將麵糊經炸篩倒進熱油內,製造天婦羅蝦的麵衣;
16. 蝦沾上低筋麵粉後,再沾上麵糊,用炸篩錨起小部份麵衣,表面放上已沾上麵糊的蝦,用匙錨起部份麵衣放上蝦身,在熱油炸約1分鐘即成。

Steps:

1. Remove the mushroom stems, wipe it clean with a kitchen paper. Use a knife to cross on the back of the mushroom.

2.Remove the root of the Golden Mushroom, seperate it and set aside.

3.Remove the shrimp head and shrimp shell, but keep the shrimp tail.

4.Shrimp tail cut neatly, use a knife to scrape off the dirt and water from shrimp tails, it can avoid the tail may explodes.

5. Cut the shrimp body and pick out the shrimp intestine, sever the tendon with a knife to prevent the shrimp from becoming curled when frying. Same for upper and lower face.

6. Press the shrimp with your fingers to sever the tendon and make the shrimp become longer.

7. In a small bowl, sift the cake flour once. Set aside.

8. Combine the water and ice cubes in a medium bowl. Beat an egg and mix with the cold water.

9. Starts to seasoning and add black sesame.

10. After gently stirring, add the sifted flour into the bowl. Use the egg whisk to combine the flour with the water and egg mixture lightly. (Be careful not to overmix the butter)

11. After finishing the batter, sprinkle the cake flour evenly over the ingredients and set aside.

12. Fill the pot with oil, Just wait for the oil temperature to reach 170℃ to 180℃, Dip in some batter to test the oil temperature.

13. Mushrooms are dipped in batter first, Deep fry to golden brown color on both sides.

14. Enoki mushroom with cake flour, dipped in the batter and use the chopsticks to drain off the excess batter.

15. Pour the batter into the hot oil through a frying ladle, in order to make the crispy shrimp tempura.

16.Shrimp with cake flour, Dipped in the batter. Use a frying ladle to hold a small portion of the crispy coating, put the shrimp on it, and then use the spoon to cover some crispy coating on it, deep fry for around 1 minute.
