🥬🍳 Budgetarian Recipe: Ginisang Ampalaya with Egg & Tofu 🍲✨

A healthy, budget-friendly meal perfect for breakfast — and maybe lunch too if may matira 😅💚

🛒 Ingredients:

2 large ampalaya, sliced thinly

1 block tofu, cubed

2 large eggs, scrambled

3 cloves garlic, minced

1 small onion, sliced

1 tomato, chopped

Oil for frying

Salt & pepper to taste
👩‍🍳 Procedure:

1. Fry tofu until golden brown, then set aside.

2. Sauté garlic, onion, and tomato until fragrant.

3. Add thinly sliced ampalaya and cook for a few minutes until slightly tender. (The ampalaya should be sprinkled with salt, then crumple/squeeze gently using your hands after slicing. Let sit for a few minutes, then rinse lightly to reduce bitterness.)

4. Add scrambled eggs followed by tofu then mixed gently.

6. Season with salt & pepper, then mix everything well.
