Avocado Mac and Cheese

Did you always wonder how to make comfort food with no guilt?
In this episode, our guest Nina Nyiri, walks us through a Vegan meal that is also Low Carb!

Vegan Avocado Mac & Cheese Recipe:
Servings: 2

4 ounces chickpea or lentil pasta, measured dry
1/2+ avocado, diced into small pieces
2 tablespoons Follow Your Heart dairy free parmesan
1 tablespoon nutritional yeast
1 tablespoon apple cider vinegar
1 teaspoon dried parsley
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt

Directions:
Pasta: In a boiling pot, cook pasta according to package directions.
Sauce: In a mixing bowl, combine the remain ingredients, set aside.
Once pasta is cooked, drain and add back to the pot (low/med heat) and add sauce ingredients. Continue to stir until cheese has melted and avocado is fully incorporated. (Add water if sauce consistency is too thick). Special Guest: @Nina_Nyiri,
