The tonality isn't the only thing that affects the listening experience, in fact timbre and technicalities also matters. Chasing the flat curve is considered as a myth even in audio related community.

Also having feeble bass and treble doesn't mean its flat. Their is other frequencies in between them too. EX255AP isn't even a studio graded earphone, its just a budget offering from Sony which comes under the commercial graded earphones. The driver units used also isn't well tuned for perfect timbre and technicalities.

Digitally EQing can affect the source audio if its done vigorously, giving a one step increase in specific frequency region is acceptable but altering the audio to a level which changing the entire color of the earphone will ruin the audio too badly. As i said in the video, its a personal choice.

Lastly listening to flat curve is not the only way to get fatigueless listening. That is also a personal thing and vary according to person. Each person will have their own comfort tonality for listening. As i said earlier tonality combined with timbre and technicalities will determine the listening experience of that set. The only way to understand this is to get into this rabbit hole and try out different iem. Cheers !!!
