EVERYDAY MAY: Day Nine!!
CHOCOLATE CAKE with FUDGE FROSTING recipe:
Ingredients for CAKE -
- 185g (6oz) butter or margarine
- 3/4 caster sugar
- 3 eggs
- 1 cup self-raising flour
- 1/2 cup plain flour
- 1/3 cup cocoa powder
- 1/2 cup milk
Ingredients for FUDGE FROSTING -
- 60g (2oz) dark chocolate
- 15g (1/2oz) butter
- 1 & 1/2 cups icing sugar
- 2 tablespoons milk
TO MAKE CAKE:
- Pre-heat oven to 180C/350F.
- Grease and line baking tin of choice.
- Place butter, sugar and eggs into bowl.
- Sift in the dry ingredients.
- Add milk and beat until mixture in smooth in texture.
- Pour mixture into tin and evenly smooth over the top.
- Bake for 45-55 minutes - check with a skewer to see if cooked.
- Stand to cool and then turn out onto a rack.
TO MAKE THE FUDGE FROSTING:
- Melt chocolate and butter over simmering water.
- Stir in sifted icing sugar and milk, resulting in a thick spreading consistency.
- Spread onto cooled cake and decorate!
