I've been on a 5 year journey to create the hottest fermented hot sauce possible, and this time, I think I've actually done it. Farm fresh Ghost peppers, grown here in my garden in TN, give this sauce a spicy kick that you would not believe. This ghost pepper hot sauce uses lacto fermentation to improve the flavor and complexity of the resulting sauce, not to mention, fermented foods are really good for you too! Learning how to make hot sauce is probably the easiest fermentation project because there's a whole lot less to pay attention to, but you still get those good probiotics and up with a killer hot sauce you can use to challenge your friends. Though this fermented hot sauce delivers a ridiculous kick, it really does add a lot of flavor when you add it (in small quantities) to chilis, soups, sandwiches, sauces, salads...
