Thanks for hangin! Today I'm sharing most of our week-long vacation with the Ali's in Montego Bay Jamaica! We got to hold-up in a multimillion-dollar, fully staffed luxury villa while tasting and experiencing authentic Jamaican culture. Club Mobay VIP airport service:
This service made the chaos of the airport way better with personalized escort service and that VIP lounge. It was so nice to be able to unwind in the airport with drinks and food in a comfy lounge while we waited for everyone in the group to land. Such a great way to start your vacation smoothly and on a relaxed note. I loved it! We also did this service going back home. Too good.

In my last vlog I had mentioned a delicious brunch dish we had on the trip... here is the recipe! (Thanks Iman!)

Ingredients:
6 Eggs
2 Bunches Swiss chard or Kale with ribs removed, cut into pieces ( you can even use both, just cut quantity to one and one)
2 packs or bunches of Spinach (pre washed is ok)
4 cloves Garlic, minced
1 large Shallot, thinly sliced
2 tablespoons Olive oil
Kosher Salt to taste
Black Pepper to taste
1/2cup Gouda, shredded
4 ounces Smoked Salmon, cut into pieces

Directions
Preheat oven to 350. In a skillet, heat the olive oil over medium heat, add shallots and garlic and sauté until fragrant and translucent. Add Swiss chard or kale, sauté until it starts to wilt. Add spinach, sauté for another minute and season with salt, and pepper. (because careful not to add too much salt here because the Gouda and salmon already have natural sodium) Continue to sauté for 2 more minutes.

Remove from heat and evenly toss in gouda and smoked salmon.

Place the mixture in a greased baking dish.

Make 6 small wells in the veggie mixture then Carefully, crack an egg into each well. Bake for 15 minutes (runny) 20 minutes for a more firm yolk.

Note: this can be done with a variety of veggies. Think of your favorite leafy greens and or mushrooms and tomatoes. Have fun, make it your own.
