广州濑粉的做法(粤语) / 大米和水的比例清楚告诉你 / 如何做出又爽又滑的濑粉秘诀 / 唤醒广东人回忆的一道小吃 / Rice Noodle Soup

广州濑粉是广东省著名传统小吃,用大米磨成粘米粉拌热水制成的粉条。简单来说,用米粉团放入架在沸水大锅上的濑粉木槽中挤压;这样,木孔中就“濑出又长又韧又爽又滑的粉条,故名为“濑粉”。
相信生活在广州的朋友再熟悉不过。
今天和大家分享在家里也能做出与老西关一模一样美味的濑粉。
要注意的是做好的粉团当天吃,放冰箱太久了,一切的淀粉食物会变硬,米粉团也一样。

注意事项:
1.做好的粉团带有流用性。但如果太稀,下到汤后粉团会黏在一起,并黏锅底。先试一下濑几条粉到汤中,看到下汤后能成形,再继续操作。如果太稀可以加粘米粉调整。
2.做好的粉团当天吃,放冰箱太久了,一切的淀粉食物会变硬,米粉团也一样。

材料 Ingredients (3-4人的量, For 3-4 people):
泰国香米 1 cup(210克)/ Jasmine rice 1 cup(210g)/ Riz au jasmin 1 cup(210g)
热水 1 cup (230ml) / Hot water 1 cup (230ml) / Eau chaude 1 cup (230ml)
煮熟的米饭 2汤匙 / Rice 2Tbsp / Riz 2Tbsp
沾米粉 1 cup (130克) / Rice flour 1 cup (130g) / Farine de riz 1 cup (130g)
木薯淀粉(茨粉)3汤匙 / Tapioca starch 3Tbsp / Amidon de tapioca 3Tbsp
香米,热水和粘米粉的体积比例是1:1:1。
The volume ratio of jasmine rice, hot water and rice flour is 1: 1: 1.

猪油和猪油渣 3汤匙 / Lard and crispy fried lard 3Tbsp / Lard et saindoux frit croustillant 3Tbsp
虾米 20克 / Dried shrimps 20g / Crevettes séchées 20g
干冬菇 50克 / Dried mushrooms 50g / Champignons séchés 50g
叉烧 150克/ BBQ pork 150g / Porc BBQ 150g
鸡汤1000毫升 / Clear chicken broth 1000ml / Bouillon de poulet 1000ml
盐 1茶匙 / Salt 1Tsp / Sel 1Tsp
胡椒粉 1/2茶匙 / White pepper powder 1/2Tsp / Poivre blanc en poudre 1/2Tsp
不打米浆,只用粘米粉和木薯淀粉的配方(2个人的量):
No rice milk. Just rice flour and tapioca starch recipe (2 people) :
沾米粉 1 cup (130克) / Rice flour 1 cup (130g) / Farine de riz 1 cup (130g)
50摄氏度热水 100ml / Water 50 degrees Celsius 100ml / Eau chaude 50 degrees Celsius 100ml
(注意不能用滚水,会直接烫熟,变成粉团。)
木薯淀粉(茨粉)1汤匙 / Tapioca starch 1Tbsp / Amion de tapioca 1Tbsp
