A Vegan Thanksgiving Feast (Vegan Holiday Recipes and Ideas) | Vlog

I thought this week it would be fun to re-vlog my Thanksgiving vlog from 2018, which was on my old channel but is now private. It's a fun video filled with a TON of vegan Thanksgiving cooking (almost a little too much; I really wore myself out 😂). However you choose to spend the coming week, I wish you well and am here if you need some vegan support!

For the Brussels sprouts, the key is to make sure they are VERY dry before you cook them; also I like cutting them into small-ish pieces and cutting out the harder white part in the middle. After frying/baking, I like to toss them in a mixture of sherry vinegar and diced shallot. It sounds so random but I worked at a restaurant that prepared the Brussels sprouts this way and they were SO GOOD. The vinegar cuts the oil perfectly and the flavors blend nicely together. 🥓Coconut bacon recipe:

Ingredients:
🧡1 cup of coconut flakes (I use raw, unsweetened--Bob's Red Mill has one as well as a brand called Let's Do...Organic which I use in the video)
🧡2tbs barbecue sauce of choice (I like Stubbs) OR a few drops of liquid smoke
🧡1tbs tamari
🧡1tbs apple cider vinegar
🧡1/2 tbs high heat oil (I used sunflower)

Steps:
🧡Mix together all four of the wet ingredients. I do this in a regular or small mixing bowl, with a fork.
🧡Add in the coconut flakes, stirring well to combine completely with the liquid.
🧡Place the bowl in the fridge and leave to marinate for at least two hours and up to 24 hours. The longer you leave it, the more the coconut will absorb the flavors and the liquid.
🧡Heat a nonstick pan to low heat. Once skillet is heated, add in coconut/liquid mixture. Begin stirring with a spatula immediately. 
🧡You can increase the temperature slightly, but no more than medium heat. Continue stirring the entirety of cooking time, as the thin coconut flakes can easily burn. They will clump together at first, but the longer they cook the less they will stick. Adjust temperature as necessary.
🧡After about 10 minutes, the coconut should be slightly browned and dried out looking. Turn the heat off if you haven't already.
🧡Let coconut sit in pan for about an hour. They will become dried out and crunchy, and perfect to add to salads, sandwiches, or even sprinkle on pancakes!
